The Perfect Hard-Boiled Egg
Last week, I decided to make a hard-boiled egg. While I love them, for some reason, I don’t make them often. So, I looked online for various recipes, but found many conflicting directions. All advised starting with cold water, but took a different path from there. One said boil for one minute and remove from the stove, while another suggested 13 minutes of boiling water. Confused, I went to the people… my people, well the ones who follow me on Twitter.

When all else fails, I look to Martha:
1. Place eggs in a large saucepan. Cover them with cool water by 1 inch. Slowly bring water to a boil over medium heat; when the water has reached a boil, cover and remove from heat. Let sit 12 minutes.
2. Transfer eggs to a colander; place under cool running water to stop the cooking. Eggs can be peeled and served immediately.

Eggs? Go to Wal-Mart, 6 for $1.98,peeled. Take out the yolks in 13 seconds,add a little mustard, curry and whatever and go for it!rdgibb
No Wal-Mart in NYC. But, sounds like an easy solution. Like the idea of mustard and curry.
In response to another comment. See in context »I always use cold water, not for texture, but to ensure that i can peel that shell off without causing a small disaster.
But it’s nice to know how to make a nicer boiled egg.
I’m of the bring to a boil and let set for 15 minutes, then cold shock. BTW it’s not the cooking method that is the problem, it’s usually the age of the egg. Older eggs will peel easier after being hard boiled.
